When it’s time to eat, we turn to the kitchen garden at 4 Winds, and our chef uses the just-picked ingredients to make everything from panzanella salads to amazing soups, and delicious coq a vin.Seasonal plantings include lettuces, herbs (parsley, dill, mint), tomatoes, beans, peas, melons, strawberries, cucumbers and plenty of peppers. We also grow lots of dahlias to have fresh cut flowers at the table. And in wintertime, we’ve been able to harvest beets, radishes and more lettuce. Our growing citrus grove is the latest addition for lemons, limes and oranges, along with several olive trees.
