When it’s time to eat, we turn to the kitchen garden at 4 Winds. Longtime caretaker Abi Martinez cooks in classic French style (formerly at wonderful Bistro Jeanty in Yountville), and he collects fresh ingredients from the garden to prepare dishes for us, from panzanella salads to amazing soups, and delicious coq a vin.
Seasonal plantings include lettuces, herbs (parsley, dill, mint), tomatoes, beans, peas, melons, strawberries, cucumbers and plenty of peppers. We also grow lots of dahlias to have fresh cut flowers at the table. And in wintertime, we’ve been able to harvest beets, radishes and more lettuce. Our growing citrus grove is the latest addition for lemons, limes and oranges, along with several olive trees.
